We call this in Filipino term Dinuguan.
Carnivorous, huh?
It is one of my favourite Filipino dish. It is a simple stew, made with pork. It’s kind of like Adobo, but it adds pig’s blood - yes, you hear me. It uses vinegar and garlic. The blood makes Dinuguan very dark and thick. It looks almost black and it makes the stew kind of gritty. I like to eat this a lot when I’m home back in our Province - I just don’t know how to cook it. My grannies cooks them really really tasty.
So here is what I call a bastardized or rather a frenchified dinuguan using boudin noir. Dinuguan is served best with hot steaming rice perhaps with good company. Sha
I wonder if Belle can cook this food as well? I want to know so that when we visit our province next time together, I’ll ask her to cook it free for me.

Hey wind, basta “maduming” tingnan na luto, masarap talaga. Di ko alam ang tinumis. Kumusta ka na?
K, looking at this picture makes me drool even though i just had it in Catanduanes when i took my vacation. i like it vinegary with kamyas…yum!
Pag lola ko nagluto nyan, Virac-style, ibang klase. I like the not-so-brownish but a little kalamansi-flavoured, walang masyadong taba at hindi malapot, that’s the dinuguan for me.
And you know, I could share you a bad/funny/disgusting story about it but - let’s leave it to the loo. LOL
That sounds nice, the blood doesn’t make me squeamish at all; must’ve been the blood puddings and raw meats that I grew up with
It’s considered to be an authentic cuisine in the Philippines the way our Mothers used to cook them - well if you travel in Thailand, those exotic “dishes” they sell on street does make me “squeamish”. Tried eating a grasshopper?
